Peony syrup is unique, beautiful and above all delicious!

You can add peony syrup to your drink, your iced coffee, your glass of bubbles, your ice cream. In short, the only limit is your imagination!

Creating a peony syrup is very simple and a magical experience. Yes, yes for real!

Ingredients :

  • The petals of a colorful peony (red and pink are perfect!)
  • 1 cup of sugar
  • 1 cup of water
  • The zest of a lemon
  • A splash (or even a sploush!) of lemon juice (terms not at all precise and never used in Ricardo's recipes, but you certainly understand!)

Instructions:

Mix the sugar and water in a saucepan over medium heat until the sugar is completely dissolved. Pour the mixture into a jar and add the lemon zest and peony petals. Let the syrup sit for at least an hour to infuse the flavors.

The syrup will then be of a perhaps a little doubtful color... this is completely normal ;0)

Then add a splash of lemon juice and stir gently. See the magic happen before your eyes. The syrup will then turn a magnificent pink!!!

You can add more lemon juice for a more intense color. You can leave the petals in the syrup for a few more hours to get a more pronounced floral taste.

Then filter your syrup into a beautiful bottle.
