Peony pina colada

A peony pina colada is like the top drink of summer.
It tastes like summer flowers, with a touch of rose. It’s beautiful, it’s good, it’s wow.
To create the pina colada, it's very simple.
First create a peony syrup.
Ingredients :
- The petals of a colorful peony (red and pink are perfect!)
- 1 cup of sugar
- 1 cup of water
- The zest of a lemon
- A splash (or even a sploush!) of lemon juice (terms not at all precise and never used in Ricardo's recipes, but you certainly understand!)
Instructions:
Mix the sugar and water in a saucepan over medium heat until the sugar is completely dissolved. Pour the mixture into a jar and add the lemon zest and peony petals. Let the syrup sit for at least an hour to infuse the flavors.
The syrup will then be of a perhaps a little doubtful color... this is completely normal ;0)
Then add a splash of lemon juice and stir gently. See the magic happen before your eyes. The syrup will then turn a magnificent pink!!!
You can add more lemon juice for a more intense color. You can leave the petals in the syrup for a few more hours to get a more pronounced floral taste.
Then add the pina colada ingredients.
- 2 cans of coconut cream
- 4 cups of pineapple juice
- 1/4 cup peony syrup or more depending on your preference
- Lots of ice cream
- Coconut rum (well there!) Yes! Yes! Malibu type or even dark rum
Mix all the ingredients in a mixer.
Pour into beautiful glasses, add a spoonful of peony syrup on top to create a unique color.
Add peony petals on top.
